I changed a 2001 engine thermostat to a 180 would any one know if the computer would be in openloop now.
What value resistor would be needed to put coolant back at normal operating temp?
I use HP Tuners software and its license is for a truck and camero only.

I have been running a 180 thermostat in my van for a couple of years.
I made no other changes and it runs fine.
Why do you want to mess with the computer?

Running a cooler than recommended thermostat can prevent the engine from reaching proper operating temperature preventing the engine from going into closed loop at the proper time or at all. It can increase emissions , fuel consumption and oil consumption from ring wear.

Although I agree that the higher operating temperature is for slightly lower emissions, the other items are questionable to me. As an example, my van gets excellent gas mileage (19 - 20mpg running the air on the highway) and has never used oil. I prefer having the extra couple of degrees in a traffic jam when the outside temperature is over 100F.
