Can anyone tell me if or how much the fuel mileage changes after the swap in an AWD? Being an 02 AWD what would be the last model year of the 5.7 injection system needed to complte the swap? Already have the long block sitting, waiting. Still have to find oil pan and mounts but I have plenty of time for that. What would be a good donor vehicle for this?

It is very hard to tell you what the mileage will be. It depends on how much you build the motor up. If you put in a 450hp monster then your mileage is going way down. But if you build a nearly stock or slightly modified v8 then your mileage should stay close to the same as long as you don't drive it like a meat head. The v8 will not be working very hard to pull the van down the road provided you can resist the urge to step on it everytime a sports car or a hemi dodge pulls up beside you at a traffic light.
