Been thinking about upgrading my AM/FM Headunit.

Looking for something simple to use. I am not super tech-savvy and have no interest or time in learning a complicated system, let alone installing one.

Need Bluetooth capable

Need Navigation capable (I use google maps a lot for work)

I do like good sound and was in the process of doing some sound deadening and speaker replacement. I have room to add a small subwoofer between the seats to elevate the Toyota Sienna center console to a better height.

Can anyone offer some advice on a make/model

I am by no means a audiophile so take this with several grains of salt. And no I didn't stay at a Holiday Inn Express.
These 2 requirements are going to put you into a digital media system. Probably with Iphone/Android compatibility and a 7" display. This is generally 2 din territory but it is possible to find in 1 din with flip out screen. The negative side of the flip out screen is that it blocks the heat/AC controls.

The stock radio is 1 1/2 din. A 2 din radio can fit with a metra mounting kit. AstroWill will be along to provide the part number.

I am looking to do something similar but with a more old school flavor. 1 din CD/DVD with flip out with 1/2 din equalizer.

A resource you can use is Car audio for dummies. It is available as a pdf online. It won't make you an expert but you will be a little smarter than a toadstool.

If you're ok with using Google maps or Waze on your phone, then a HU with Android Auto should work well (works with your phone apps). If you dont need CD/DVD then a "media receiver" sounds good. I've had consistently good luck with Pioneer car audio (back to the 8 track days) and Kenwood. Sometimes JVC. Sony less so. Many like Alpine. Some Boss units have been pretty decent and great deals, though I'm not recommending them. I shy away from Blaupunkt, Clarion, and some others, though I've had no exposure to them in years. A double DIN requires a bit of dash modification, but to get a 7" screen for navigation seems worth it. Use the newer kit (Metra?). I'd like to see what you do as mine's still in (slow) progress.

I can't really recommend a brand, sometimes the lesser named brands have better features/interfaces, sometimes not. If you are going to be doing navigation, I definitely recommend going with a double DIN system using an adapter like they did here: Double DIN Install - Alpine ILX-207 - Metra Double DIN kit
