It might have to do with the seats. I put a Gen 2 seat in my Gen 1 van and I was much closer to the steering wheel.

The dash is bigger, especially around the cup holder/ glove box area. My right knee sits up against the cup holder, didn't in my 85. It causes some discomfort on long drives. My 98 is definitely is not as comfortable to sit in as my 85 was.

Is it me, or are the older doghouses easier to remove and give more access to the motor?

Yep, Gen 1s are definitely easy to work on.

I have to admit, the shorty panel is the coolest A/S. I miss my pro street 85. Body wise, it received more attention than my pro street passenger 98, don't notice it is tubbed. But there are a lot of custom Gen 1s.
Definitelt easier to work on, less dash, less dash pieces to remove, doghouse easier go take off.

But then again, I have the only or 1 of few all aluminum V8 prostreet Gen 2 in the country. So how different do you want to be?

When I got my Gen 2 I was surprised by how hard it was to get to the motor past the doghouse. It was a pain in the ***, and I have yet to be satisfied with how to access the engine with the doghouse redesign. Plus, I cannot seem to get the doghouse past the front seats in my 2000 Astro, as the seats do seem to be closer to the front of the van, and the dash is more expansive. All I can say is, sometimes simpler is better. Yet another reason why I went back to a Gen 1 van.
