Been lurking on here since the lock down started, wanted to get an Astro or Safari since the beginning of the year, finally found the "right one" a month ago after browsing rust buckets on craigslist for months.

So far I've ripped off the cladding and running boards, pulled the back bench and carpet due to dutch door leak. On the fence about making it into a camper. I have access to a CNC machine and have a background in engineering, carpentry, metal working, and mechanics.

Welcome!
With your background, you can probably find all kinds of things to work on/modify/delete/change/re-modify/redesign, etc: and never get to use your van.
Wish you were located out west

Hi, and welcome from rural Manitoba, Canada. As an Engineer, you may want to explore a few of Wimpy's threads on the camper idea; specifically "Wimpfalia" as he was working on a kind of modular approach to building these things out. And DEFINITELY, you're on the right track with deleting the cladding...nothing but a rust magnet.
Best of luck to you in your build!

Move along....all is well.....return to your homes.....nothing to see here.

Welcome!
Cladding delete, good move to start imo, wish I did it earlier.
I also started with a dutch door leak, years later I'm finding electrical issues related to moisture corrosion, but that's Florida where any moisture inside becomes steam and finds it's way into everything.
Definitely share what ideas you machine for your van.
Good luck with your camper upgrade.

also, I had great luck working with Steele Rubber Products, and they've developed an excellent set of reproduction seals for the Dutch Doors.
